RumChata Pumpkin Pie

Ingredients

6 oz RumChata

1/2 cup brown sugar 
1 (15 oz) can of pumpkin

1/2 tsp ground nutmeg
1/2 tsp salt
1, 9 inch unbaked pie crust

Directions

Preheat oven to 425 degrees Fahrenheit. Whisk pumpkin, brown sugar, eggs, sweetened condensed milk, RumChata, spices and salt in a medium bowl until smooth. Pour into crust and bake for 15 minutes. Reduce oven temperature to 350 degrees and continue baking for 35 to 40 minutes or until knife, inserted 1 inch from crust, comes out clean. Let cool. Garnish as desired.


RumChata Bananas Foster

Ingredients

5 bananas, quartered
1 tsp lemon juice
1 jar (12.25 oz) caramel ice cream topping
1/2 tsp cinnamon
3 tbs RumChata
Vanilla ice cream

Directions

In a skillet combine caramel topping, lemon juice, RumChata and cinnamon and bring to a boil, stirring often. Remove from heat and gently stir in the bananas. Spoon over ice cream!


RumChata Cheesecake

Ingredients

15 graham crackers, crushed
2 tbs butter, melted
32 oz cream cheese, softened
1 1/2 cups sugar
3/4 cup RumChata
4 eggs
1 cup sour cream
1 tbs vanilla extract
1/4 cup all-purpose flour

Directions

Preheat oven to 350 degrees Fahrenheit. Grease 9" spring form pan. In a medium bowl, mix graham cracker crumbs and melted butter. Press into the bottom of the pan. In a large bowl, mix cream cheese with sugar until smooth. Slowly blend in RumChata and eggs. Mix in sour cream, vanilla, and flour until smooth. Pour filling over prepared crust. Bake for 1 hour. Turn off oven and let cake cool in oven with the door closed for 5 to 6 hours to prevent cracking. Chill in the refrigerator until serving. Top with dollops of glazed strawberries or cherry pie filling to finish, if desired.


RumChata Pudding Shots

Ingredients

1 cup RumChata
1 box of chocolate or vanilla instant pudding
1 cup milk
1 container of whipped topping

Directions

Mix pudding, milk, and RumChata until smooth. Stir in whipped topping. Put into plastic shot containers with lids and freeze.


RumChata Butterworth

Ingredients

1 part RumChata
1 part butterscotch schnapps

Sweet Potato Casserole

Ingredients

1/3 cup RumChata
4 large sweet potatoes, scrubbed
3 Tbsp unsalted butter melted, plus more for greasing pan
1 Tbsp dark brown sugar
1 tsp kosher salt
1/4 cup coarsely chopped pecans

Directions

Preheat oven to 400 degrees farenheit. Put the sweet potatoes on a baking sheet and pierce each one 2 or 3 times with a fork. Bake for 45 to 60 minutes or until tender. Set aside to cool. Turn the oven down to 350 degrees. Scoop the sweet potato out of their skins and into a medium bowl. Discard the skins. Mash the potatoes until smooth. Add the melted butter, brown sugar, salt, RumChata and pepper to taste. Whisk the mixture until smooth.

With remaining butter grease an 8x8 inch casserole pan. Pour the sweet potato mixture into the pan and sprinkle the top with pecans. Bake for 30 to 40 minutes until a bit puffy. Serve immediately.



The Honey Badger

This recipe uses powdered sugar, butter, vanilla and RumChata.

Instructions:

1. Beat butter, softened (ideal texture should be like ice cream) for a few minutes with a mixer with the paddle attachment on medium speed. Add 3 cups of powdered sugar and turn your mixer on the lowest speed (so the sugar doesn't blow everywhere) until the sugar has been incorporated with the butter. Increase mixer speed to medium and add vanilla extract, salt, and 2 tablespoons of RumChata and beat for 3 minutes. If your frosting needs a more stiff consistency, add remaining sugar. If your frosting needs to be thinned out, add remaining RumChata - 1 Tablespoon at a time.

Cupcakes (yields approx. 18)

1/2 cup butter (1 stick) softened

1 1/2 cups sugar

2 cups flour

2 tsp baking powder

dash salt

1 tsp cinnamon

1 cup RumChata

1 tsp vanilla extract

4 egg whites

Directions

Preheat oven to 350 degrees. Combine sugar and butter in mixer or use hand mixer, beat until fluffy.  In a separate bowl, mix together flour, baking powder, salt and cinnamon.  Set aside.  In a small measuring cup, mix the RumChata and vanilla together.  Set aside.  Alternating, add in the flour mixture and RumChata mixture.  Start and end with the flour mixture.  In a clean mixing bowl, beat egg whites until soft peaks form.  Fold egg whites into the batter with a spatula.  Fill the cupcake cups and bake for 20 minutes.  

Frosting:

8 oz. package of cream cheese (softened)

1/4 cup butter (1/2 stick) softened

1/2 tsp vanilla extract

3 tbsp of RumChata

1 lb. of confectioners' sugar (powdered sugar)

Combine butter and cream cheese until smooth.  Add vanilla extract.  Slowly add the powdered sugar.  Mix in the RumChata.  Frost the cooled cupcakes and enjoy!


Raspberry Lady Finger Martini

Ingredients

3 parts RumChata
1/2 part Raspberry Vodka
1/4 part Caramel Vodka
1/4 part Espresso Vodka
1/4 part Chocolate Liqueur

RumChata Key Lime Pie

Ingredients

5 beaten egg yolks

10 oz sweetened condensed milk

6 oz RumChata

1/2 cup Key Lime juice

1 9-ounce prepared (or homemade) Graham Cracker crust.

Preheat oven to 375 degrees Fahrenheit. In a bowl beat egg yolks and combine with sweetened condensed milk and RumChata. Gradually add Key Lime juice while continuing to mix. Pour mixture into graham cracker crust. Bake in oven for 15 minutes, remove and allow to cool. Serve cold/chilled, topped with cool whip/whipped cream and Key Lime slices if desired.

After pie has cooled, place in refrigerator until cool and cut into slices, insert 1 skewer/kabob stick into pointed end of pie (not through crust). Dip/pour melted chocolate over entirety of pie slice and place on sheet of wax paper.* Place in freezer ASAP- get in freezer as soon as possible to protect shape/integrity of the pie.
Freeze for minimum 1 hr. Enjoy. Thoroughly.

Combine whole milk, RumChata and sugar in a mixing bowl. Mix until sugar is dissolved by whisk or hand mixer. Stir in heavy cream and flavor to taste with vanilla bean paste. Pour mixture into ice cream maker freezer bowl. Allow to churn for 20 minutes.

Peel and mash 2 extra ripe bananas into a smooth texture. Add bananas to ice cream maker after 20 minutes and allow to churn for another 10 minutes. Pour into an air tight bowl and place in freezer. Allow ice cream to set to desired hardness.

RumChata Bread Pudding

Ingredients

1 cup RumChata

2 cups granulated sugar

5 large beaten eggs

1 cup milk

2 teaspoons pure vanilla extract

1/2 cup packed light brown sugar

3 cups cubed Italian bread

Directions

Preheat the oven to 350 degrees F. Grease a 13x9 pan. Mix together granulated sugar, eggs, milk and RumChata; add vanilla. Pour over cubed bread and let sit for 10 minutes. Pour bread mixture into prepared pan. 

Sprinkle brown sugar over the top and bake for 35-45 minutes or until set.

RumChata Pumpkin Spice Muffins

Ingredients

1 Box of Spice Cake Mix (can also used Carrot Cake Mix) 

1 15 oz can of Pumpkin 

1 tsp Fresh Ground Nutmeg
